Chef Badr Benjelloun
Moroccan, and a lifelong traveler who’s lived out of a suitcase across the globe, Chef Badr brought that same fast-paced mental agility into the kitchen — mixing traditions, spices, and cultures without fear.
Along the way: named Chef of the Year, twice Bartender of the Year in Beijing, winner of the Golden Bear Award, and a two-time finalist at the World Couscous Championship. Trophies he calls just the baggage he brings to the table every night.

Plant-Powered by Heritage & Choice Plant-based dining isn’t a trend here—it’s our foundation. From our roots as a hummus bar to my 16 years living in China, we’ve learned to treat vegetables as the protagonist. Today, over 50% of our menu—including our tasting menu—is available in vegan or vegetarian versions. We don’t do “meat-free” compromises; we use quality tofu, seitan, and tempeh to create bold, protein-rich dishes that stand on their own.
